Chocolate – Cranberry Nut Balls

These are really delicious and so much better for you than reaching for a cookie or a muesli bar.

These will definitely be staying on my top recipes list – especially great for school lunches!

Ingredients:…makes 15…

2 cup medjool dates, pitted

3/4 cup raw nut butter (I used cashew butter and made it that same way I make Almond Butter)

1/3 cup raw carob (or you can use cacao powder)

1 Tsp. vanilla

1/2 cup walnuts

1/2 cup pecans

1/2 cup cranberries

15 Brazil nuts

1/3 cup shredded coconut

Method:

Combine the dates, nut butter, carob and vanilla in a food processor.  Process for 1-3 minutes depending on the speed of your processor, but you want a really smooth dough to form.

Add the pecans, walnuts and cranberries and process only a few seconds until the nuts are chopped and incorporated.  Leaving them quite course gives a lovely crunch.

Refrigerate the mixture for 2-3 hours.

Once chilled, take spoonfuls of mixture and form into a ball around a Brazil nut so that the Brazil nut remains in the centre of each ball.  Roll the ball in the shredded coconut and repeat the process for the remaining mixture.

These delicious nut ball will keep for 1 month in the fridge or 3 months in the freezer.
