
I do have a sweet tooth and I do love my nuts and dried fruit mixed together in a yummy dessert or sweet treat.
This recipe requires a bit of planning ahead – but you could get it done in the day.
Ingredients:
2 cups dried figs (soaked)
2 cups of pecans
1 cup agave nectar
1/4 cup psyllium husk
2 Tbsp cinnamon
1 Tsp nutmeg
1 Tsp sea salt.
In a food processor blend all the ingredients together. I only have a small food processor, so I had to do this in batches, it works fine. Just make sure at the end you combine all the ingredients well.
In a cup cake tray (or in a mini cupcake tray) place ingredients and pat down firmly. I used a mini cupcake tray and rounded the tops to be cup cake looking. I then placed in the dehydrator for 4 hours at 118 degrees.
After the dehydrator, I placed in the freezer overnight. The next morning it was easy to remove the moulded cupcakes ready for icing.
Icing:
Combine 1 cup raw cacao, 1/4 cup coconut oil, 1/4 cup agave nectar, 1 tsp cinnamon and 1 tsp salt.
Ice the cup cakes!
Very rich – very delicious!
I popped back in the freezer for an anytime snack for the kids and I!
