I have just finished my first ever raw soup!
I was a tad reluctant at the thought of a cold soup but after trying this recipe, I am excited by raw soups and want to try more recipes.
This is a green soup that has curry in it. The soup also requires that 2 cups of hot water are used which makes the soup actually ‘luke’ warm to eat – so in fact it is not cold.
2 zucchini chopped
1 Tbsp. miso paste (I used miso powder)
1 Tsp. garlic
2 Tbsp. yellow curry powder
1 Tsp. salt
2 cups hot water
¼ cup olive oil
Blend all ingredients (except olive oil) until nice an smooth and creamy. While still blending, add the olive oil through the top of the blender, slowly.
Serve and sprinkle with cayenne pepper. This recipe makes 2 serves.
