
A lovely warming soup to enjoy on a cold and blustery day.
I love the saltiness of the miso and the spice of the cayenne pepper that marry perfectly with just a hint of garlic… you would not even notice spinach was in this miso except for the radiant green colour of the miso š
Ingredients:…serves 3-4…
A large handful of spinach
1 garlic clove, peeled and minced
2 Tsp. diced red onion
1 Tbsp. white miso paste
500ml hot water
1 Tbsp. olive oil
1/4 Tsp. cayenne pepper
Method:
Place all ingredients, except the olive oil into the blender and blend on high speed until the soup is rich green and the spinach is broken down.
Through the lid, pour the olive oil slowly.
Add a touch of cayenne pepper and lightly blend.
Serve into miso bowls.
Warm you body, soul and taste buds as you sip on this miso soup.
