Day 283 – Mesquite Candied Pecans

Mesquite Candied Pecans
Mesquite Candied Pecans

I just love eating nuts when feeling a little peckish and even though they are high in proteins and essential nutrients as essential fatty acids… too many will add a few centimeters to your waist line, hips or wherever you start getting cuddly!

Unfortunately, my passion for raw nuts has put a little ‘tubbyness’ to my waist and I can’t get into my favourite  Mavi size 10 anymore…

But I must say – if I am going to snack on something, I’d much rather eat a handful of healthful and tasty raw nuts than munch on a packet of corn chips, shapes, biscuits, pringles, kettle chips…. etc….

Here is a great ‘sweet’ nut recipe…  tomorrow I’ll share a ‘savoury’ nut recipe – a perfect substitute for snack nuts at parties or over a drink with a friend.

Ingredients:…makes 2 cups…

1/4 cup maple syrup

1 Tbsp. mesquite powder

1 Tsp. lemon juice

1/2 Tsp. vanilla powder

1/4 Tsp. sea salt

1/4 Tsp. cinnamon

2 cups dry pecans (or any nuts of your choice)

Method:

In a medium sized bowl, whisk together all ingredients, except the nuts.  Once all ingredients are combined add nuts and coat well in the mixture.

Place nuts on a lined dehydrator tray and dehydrate for 12 – 16 hours or until well dried.

Store in an airtight container.
