
These are impressive, tasty and amazingly quick – perfect starter for any party or just whiz some up for an afternoon snack!
Ingredients:
2 zucchini’s cut into thin slices
1 1/2 cups cashews (soaked)
1/2 cup walnuts
1/2 cup water
2 Tbsp. olive oil
1/4 cup basil
2 cloves garlic
1 Tbsp. lemon juice
pinch of salt
pepper to taste
sun-dried tomatoes, chopped for garnish
Methods:
Place cashews, walnuts, water, olive oil, basil, garlic, lemon juice and seasoning into a food processor.
Process until smooth.
Adjust flavours as required.
Lay out zucchini slices on a platter. Top with spoon fulls of nut basil mixture. Garnish with sun-dried tomatoes.
