Day 326 – Aioli


Last night I whizzed up a slightly different Aioli sauce to go with the kids chips for dinner…  They preferred tomato sauce!  So I had the aioli with my mushroom burgers and salad – was delicious!


2 cups fresh basil

1 cup oil

3/4 cup raw pistachios

1/4 cup filtered water

2 cloves of garlic

1 Tsp. Dijon mustard

juice of 1/2 lemon

pinch of sea salt


In a small food processor or a blender, combine all ingredients until lovely and smooth or keep it chunky if you like a chunky sauce!

Too easy and adds a real punch to any dish – I might even have some of this on a sandwich tomorrow 🙂
