
I’ve had an absolutely frantic 3 weeks with Uni studies, Work, Raw Fooding and Thermomixing – plus the usual family and kid activities, household and gardening chores etc…
Exhausted… I’m opting for a week of simple salads to get me through to the mid semester break…
Here is my first one – I hope you enjoy it… I am not usually a fan of putting sweet fruits into salads, but this works for me!
Ingredients:… serves 1…
1 1/2 cups spinach leaves
1/2 orange, peeled and cut into segments
1/2 portabello mushroom, sliced and chopped
For the dressing…
1 Tbsp. Tamari
1/2 Tbsp. sesame oil
1/2 Tsp. agave nectar
Sprinkling of sesame seeds
Method:
In a small bowl mix together the dressing.
On a plate arrange your salad leaves topped with mushrooms and orange segments.
Pour dressing over the top and sprinkle with sesame seeds.
