
I just love these sushi rolls – how quirky do they look? Not only are they impressive to look at – but are impressive on those taste buds!
I made up a quick cheese with Tamari as the ‘rice’ part of the sushi, then added some marinated Enoki and some sliced avocado.
Makes 3 rolls…
Step 1:
Put 1/2 Pkt Enoki mushrooms into a small dish and marinate in 1/2 Tsp salt, 1 Tbsp. olive oil and 1 Tbsp. lemon juice.
Step 2:
While the Enoki is marinating, make up some quick cheese.
The quick cheese:
In a small food processor (or with a blender stick), process together 1/2 cup macadamias, 1/2 cup cashews, 1 Tbsp. Tamari (or Nama Shoyu), 1 Tbsp. lemon juice until smooth (add a few Tsp. of water if required). You want this spreadable.
Step 3:
Organise the rest of your ingredients.
The other ingredients:
3 raw sushi / nori sheets
1/2 avocado sliced
Step 4:
Putting it all together.
Place a nori sheet onto the bench top.
Spread 1/3 of the quick cheese horizontally across the sheet 1 inch from the edge.
Place pieces of avocado and enoki along the quick cheese.
Roll the nori and using some water, seal the roll at the edge.
Place the roll edge side down while you complete a further 2 rolls.
When you have made your 3 rolls – cut into thirds and serve with some greens.
