Raw Cabbage Cups

What a quick an easy and ‘oh so very tasty’ lunch.

What you need…


A few large cabbage leaves, stem removed

1 red apple

1 stalk celery

1 carrot

2 spring onions

1 clove of garlic

zest of 1/2 a lime

juice of 1/2 lime

1 Tbsp. raw apple cider vinegar

1 Tsp. cumin

1/2 Tsp. paprika


In a small food processor, whiz up all the ingredients, except the cabbage leaves.

Place spoonfuls out onto the cabbage leaves and enjoy with some Almond Satay.  Or just pick them up and eat them on their own.

A zesty, tasty, yummy lunch!  Who ever would have thought eating raw cabbage could be soooo delicious?
