
I am enjoying this week of 100% raw food. It has inspired me to keep on cooking all week. I am stacking up the fridge with so much delicious food so that I am not tempted to cook up something ‘cooked’.
So far this strategy is working!
Ingredients: …makes 3…
1 clove garlic
1/4 red onion
1 zucchini, roughly chopped
1 beetroot quartered
2 carrots, roughly chopped
1 tomato, quartered
1/4 cup sun-dried tomatoes
1/4 cup fresh parsley
1 Tbsp. Braggs mixed herbs or Italian Mixed Herbs
1 Tsp. sea salt
2 cups flaxseed meal
Method:
Combine all ingredients (except flaxseed) in a high speed food processor until well processed and combined. Add in the flaxseed meal 1/3 cup at a time and pulse the mixture. The mixture needs to be quite thick but spreadable.
When combined, place 1 1/2 cup fulls onto lined dehydrator trays and spread out into large pizza rounds with a metal spatula.
You should be able to make 3 pizza crusts with this recipe.
Place pizza rounds into the dehydrator on 110 degrees Fahrenheit for 8 hours, flip onto a mesh tray and dehydrate a further 2 hours.
You want the pizza crusts to be pliable, not too dry, not too moist.
Then top with your favourite toppings.

PS. I topped mine with tomato sauce (1 tomato, handful of sun-dried tomatoes, onion, garlic), spinach, olives, spicy sun-dried tomato dip, some Italian Herbs and some sea salt. Absolutely delicious!
