
I could eat this everyday it was sooo good and what makes it even more exciting is that this has global household approval AND I made this recipe up myself!
Try it – it is sooo good!
Ingredients:
1 zucchini, spiralised into noodles
3 cups thinly sliced kale
1 large avocado, peeled and diced
juice of 1/2 lemon
1 Tbsp. savoury yeast
1/2 Tsp. Herbamare seasoning or sea salt
pinch of cayenne pepper
1 Tbsp. pine nuts
1/4 cup sun-dried tomato strips
Method:
In a large bowl place the sliced kale, avocado, lemon juice, savoury yeast, cayenne pepper, and herbamare seasoning. Using your hands massage the avocado and dressing into the kale leaves until well infused.
Stir through the zucchini noodles, sun-dried tomatoes and pine-nuts and serve.
Makes 2 large servings or 4 side serves.
