
I found an article in The Age this week about Protein Balls and after reading the article and recipe – I thought hello… these are just like my Cacao Nib Cookies… this is a slight variation but still a raw protein packed energy ball – no light toasting of nuts allowed though!
Ingredients:…makes 10-12…
150g walnuts (I pre-soak and dehydrate mine)
100g almond (again pre-soaked and dehydrated)
2 Tbsp. pumpkin seeds
170g soaked dates, pitted
100g diced dried apricots
10og prunes
1 Tbsp. tahini
2 Tbsp. raw cacao
1/2 cup cacao nibs
1 Tsp. vanilla powder
1 Tbsp. cinnamon
2 Tbsp. agave or date juice from soaking
Pinch of sea salt
Method:
In a food processor place walnuts, almonds and pumpkin seeds – process until finely ground.
Add the remaining ingredients and process until the mixture starts to form a ball.
If you need to – add more nuts – you don’t want the mixture too moist.
Scoop out ice-cream full amounts onto a lined dehydrator tray and dehydrate overnight at 118 degrees Fahrenheit.
Place in an airtight container and enjoy your protein energy orbs when you need a power snack!
