
Ever since I have arrived home from Fremantle – I have had the dehydrator going 24 /7 with a whole array of different raw foods.
Pizza bases, soaked nuts, falafels and these gorgeous cookies that already my children have begun devouring…. so much for saving them for tomorrow’s lunch 🙂
Ingredients:
1 1/2 cups almonds – soaked 4 hrs
1 cup walnuts – soaked 4 hrs
1 1/2 cup dates, pitted and chopped
1/2 tsp. vanilla paste
1 cup cacao nibs
2 Tbsp. cacao powder
1 Tbsp. agave
pinch of salt
Method:
Process the nuts in a food processor until they form a crumbly texture. Add the dates an process until combined.
Add the remaining ingredients and pulse until combined.
On a dehydrator tray, scoop ice-cream scoop fulls of mixture on to the tray.
Dehydrate for 24 hours.
Store in an airtight container – unless they all get eaten first 🙂
These will last for 1 month if kept in the fridge or you can freeze them for up to 4 months… I doubt mine will ever see a freezer 🙂
