
As I sit here with my laptop – I can smell the lovely sweet smell of cinnamon and figs drying in my dehydrator.My son Xavier chose this recipe from Jenny Ross’ ‘Raw Basics’ cook book and it is a first for me.
Together we headed out this morning to the supermarket to get some dried figs and a few more walnuts so we could make this recipe. Xavi rode his bike and I walked – was a lovely morning. It is so nice that he is interested in my raw food blog and in helping find and make new recipes.
Ingredients:
4 cups of raw walnuts
1 cup dried figs (soaked)
1 cup diced apples
1/2 cup raw honey
1 Tbsp cinnamon
1 Tsp nutmeg
1/2 Tsp vanilla
1/2 Tsp cloves
1 Tsp sea salt
Method:
In a food processor combine the walnuts, cinnamon, salt, nutmeg and cloves until a light meal forms.
Pour the meal into a separate bowl.
In the food processor combine the remaining, apples, figs, honey and vanilla until well minced.
Pour the wet ingredients into the dry ingredients and combine until the mixture has formed a dough.
Form into 16 rounded cakes and place on a lined dehydrator tray.
Dehydrate for 8 hours at 118 degrees or 47 degrees Celsius.
