Simple Lettuce Salad

I’ve got lettuce growing out of control in the garden and I’m going to have to get through them in a fun and creative way because I find lettuce so incredible boring to eat!

This salad is the kind of taste sensation that works for me…

Ingredients:

1 head of lettuce

1 avocado, sliced

1/4 cup pine nuts

1/2 cup chopped baby tomatoes

1/4 cup seaweed (dulse, shredded sushi sheets)

Dressing…

1/2 cup cashews, soaked for 30 mins

1/4 cup water

1 clove garlic

1 Tsp. onion powder

2 Tsp. lemon juice

pinch of lemon zest

2 Tsp. nutritional yeast

Method:

Wash and dry lettuce leaves and place in bowl.

Process together all dressing ingredients in a small processor until creamy.

Massage the dressing through the lettuce leaves.

Arrange lettuce on plate and top with tomatoes, seaweed, pine nuts and avocado.

 

I enjoyed this slightly different salad – so much better than a plain old garden salad!
