Walnut Tahini Salad

I love making this salad up for a really quick lunch.  Eat it straight out of the bowl for a quick wholesome meal or drop spoonfuls onto lettuce leaves and serve as finger food at a party.

This literally only takes 5 mins to make and it is a complete meal, full of vitamins, protein. calcium and energy.

Ingredients:… for two good size servings….

1/2 cup walnuts

1 1/2 carrots, roughly chopped

1 large floret cauliflower, quartered

1 stalk celery, roughly chopped

1/2 medium sized beetroot, peeled and quartered

1 spring onion, chopped

1/2 cup coriander sprigs

1 Tbsp. Tamari

1 Tbsp. Tahini

1 Tsp. apple cider vinegar

1/2 Tbsp. sesame oil

1/2 Tsp. chilli flakes

Method:

Put everything into the food processor and process together until combined and chopped and you are ready to serve!

Too easy and absolutely yum!

Add or take away vegetables as you like – use up the leftovers in the fridge… this is so flexible and easy.
