This is lovely nutty coconut treat to have with an afternoon cup of tea. Simple to make – with take you from start to finish less than 30mins.
1 cup raw macadamia nuts
1 cup raw cashew nuts
3/4 cup desiccated coconut
1 Tbsp. coconut oil, melted
1/3 cup raw agave nectar
1 Tsp. vanilla
1/2 Tsp. sea salt
1/2 Tbsp. coconut nectar
extra shredded or desiccated coconut
In a food processor, process the nuts until finely ground. Add the agave, vanilla, coconut nectar and salt and process until the mixture is moist and dough. Stir through the coconut.
Place the mixture in a bowl and refrigerate for 15 minutes. The mixture will harden slightly.
When firm, roll the mixture into balls and roll in the extra coconut.
These macaroons will keep with 1-2 weeks in the fridge.
