How’s this really simple cous cous like salad that could accompany a lamb chop, steak, or at my place a vegetable curry.
1/4 head cauliflower, roughly chopped
1 carrot, roughly chopped
1/2 cup chopped walnuts
1/4 cup sultanas
2 Tbsp. desiccated coconut
2 Tbsp. lemon juice
1/2 Tsp. ground Coriander
pinch sea salt
Parsley to garnish
In a food processor, processor together the carrot and cauliflower until well chopped. Pour into a bowl and add in the walnuts, sultanas and coconut and stir through.
In a separate small bowl, combine the lemon juice, cumin, coriander and salt.
Pour the dressing over the carrot and cauliflower mix and stir through.
Serve and garnish with some chopped parsley.
Raisins for sultanas.
Fresh coriander for ground.
Almond for walnuts.
