
It is exciting this week to have a couple of health food books arrive in the post – including 1 new raw food recipe book.
I needed a Hummus to put on my raw Pakora’s and found just the thing in Amber Shea Crawley’s book ‘Practically Raw’.
Ingredients:
1 large or 1 1/2 medium zucchini’s, peeled and chopped
1/2 cup Tahini
2 Tbsp. lemon juice
1 small garlic clove, peeled
1/2 Tsp. agave nectar
1/2 Tsp. sea salt
1/4 Tsp. cumin (or a little more if you like it)
Method:
Combine all ingredients in a high-speed blender or small food processor and blend until smooth.
Taste for seasoning and adjust as required.
Place in fridge for an hour before serving.
This will be just the thing to accompany my Pakora’s that are dehydrating away in the dehydrator.
