
I have been meaning to make coconut yoghurt for months now and have never actually had enough coconuts at the right time to make it. Today I have coconuts and I’m ready to crack them open.
Ingredients:
3 cups coconut meat
3/4 cup coconut water
1/2 Tsp. probiotic powder (this sometimes comes in capsules – break open 2 capsules and add to yoghurt)
(I used 3 coconuts and they yielded a good amount of coconut meat. If you want to make more of less yoghurt – remember the ratio 1 cup meat to 1/4 cup water)
Method:
In a food processor or high speed blender, blend the coconut meat and water together until smooth. The consistency should be yoghurt like – not too runny – not too thick. Add the probiotic powder and pulse through the coconut meat.
Place in a glass jug or jar, cover and also to sit for 10 -12 hours in a warm spot. On top of the dehydrator is perfect.
When set, taste and add flavourings as desired.
Place in a jar and keep in the fridge.
The yoghurt will keep for 4 -5 days in the fridge.
