After the last day of my Thermomix training today I was inspired to come home and try a recipe for raw vegan custard.
Is it possible to create a lemon custard without any dairy, eggs, or cornflour?
So this is what I came up with…

Zest of 1 Lemon
60g coconut sugar (4 Tbsp)
45g chia seeds (3 Tbsp)
500g almond milk (2 cups)
In the Thermomix, place the sugar, lemon zest and chia seeds.
Blend for 10 secs / speed 9.
For warm custard:
Add the Almond Milk and set to warm on 50 degrees/ 6 mins / speed 3.
Serve warm – any leftovers can be refrigerated overnight – the custard will set quite firm.
For cold custard:
Add almond milk and blend 10 secs / speed 7.
Place in the refrigerator over night to set.
I enjoyed some warm and also placed some in the fridge overnight for breakfast tomorrow…
