It always amazes me how Amber puts together so many different flavours in the one dish and then just seems to come together beautifully…
Just like this one…
3 Tbsp. olive oil
1 Tbsp. lemon juice
1 Tsp. agave nectar
1 Tsp cumin seeds
1 Tsp. paprika
1/2 Tsp. sea salt
Pinch of cinnamon
2 carrots, shredded
1/3 cup raisins or cranberries
1/3 cup green olives, roughly chopped
1/4 cup chopped coriander
In a bowl, mix together the oil, lemon, agave and spices.
Add the carrot and toss to coat with oil mixture. Add the raisins, olives and coriander and toss again.
Serve straight away or chill for a few hours.
