I managed to save a least a few of the marinated mushrooms for these delicious nut burgers…
I just LOVE raw food when it tastes this good!
1 cup dry walnuts (I dehydrate and soak mine first)
1/2 cup chopped spring onions
1 small clove garlic (or two)
2 stalks of celery, roughly chopped
1 medium carrot, roughly chopped
1/2 batch of Simple Seasoned Mushrooms
1 Tsp. lemon juice
1/2 Tsp. ground sage
1/2 Tsp. sea salt
1/4 cup ground flaxseed
In a food processor, process the walnuts, onions, garlic and pulse until combined. Add the celery, carrot, mushrooms, lemon, sage, salt and blend until smooth. Add the flaxseed and process until smooth.
On a lined dehydrator tray – shape 6 equal portions into flat round burger shapes. Dehydrate for 1 – 2 hours until the top looks dry. Flip onto the mesh and dehydrate a further 6 – 8 hours until dry on the surface but still tender.
Make it Baked:
Preheat oven to 180 degrees Celsius and grease a baking sheet with coconut oil. Scoop the mixture into 6 equal portions on the baking sheet. Mold into flat round burger shapes. Bake for 15 minutes until the tops are dry, then flip the burgers carefully wiht a spatula. Bake a further 18 to 20 minutes until dry on top and lightly browned.
Remove from the oven and allow to cool slightly before serving.
Serve with lettuce and tomato or if you are not strictly a raw vegan in a bun!
