Day 204 – Raw Raffaello


These are amazingly yummy and so easy to make…

Ingredients:…makes 12…

2 cups desiccated coconut

1 cup cashew flour (made by processing cashews until fine and powdery)

1/3 cup agave (light is best)

30 grams melted cacao butter

pinch of sea salt

1/4 Tsp. vanilla powder

12 almonds


In a bowl mix together all ingredients except the almonds.

When the mixture is well combined, take teaspoons full of mixture and form into a ball with your hands.  Place an almond in the centre of the ball and press the mixture firmly around the almond to form the ball.

Set in the fridge for 1 hour before serving.

I reckon these taste just like the real Raffaello’s…
