Happy Easter!

My biggest challenge with this recipe was making them look gorgeous – like shop bought chocolate.  The mixture doesn’t actually fully melt but remains quite thick.  To liquefy the mixture I’d need to raise the temperature well beyond 44 degrees celcius and I couldn’t bring myself to do that… As soon as I raise the temp. vital enzymes, minerals and vitamins are compromised.  I want to eat chocolate and know that it is actually good for me in it’s raw state…

In the end I formed half into little chocolate squares and pressed half into Easter moulds which came out a little bit bubbly 🙂

All extremely delicious though and I must say this is actually the best raw chocolate I have ever eaten. It is good enough to gift and give away or even sell – do you like my Koko Black impression? (probably also the most expensive chocolate I’d ever made too!)

Ingredients:

2 cups cashew butter

2 cups cacao powder

2 cups cacao butter, grated and melted in a dehydrator or over warm water

seeds of 1 vanilla pod

1 Tbsp. vanilla extract

1 cup agave nectar

Method:

In a food processor blend together the cashew butter and the cacao until well combined.

Add the remaining ingredients and blend on low until well combined.  Add in the cacao butter a little at a time to prevent too much splashing.

The mixture will be quite thick and viscous, it is easiest to shape with your hands or push into moulds with your fingers.

If using a mould, press into mould and freeze about 10 minutes and press out – repeat until complete.

Remember if you want to press two halves of the moulded chocolate together – you will need to save a little chocolate mixture to combine the eggs together at the end.
