Sounds fancy – difficult to make! Not so much…
Easy and Tasty!
1 large zucchini, spiralised
1 cup basil and spinach combo
1 Tsp. lemon juice
3-4 garlic cloves (don’t add more – perhaps less)
1 Tbsp. white miso paste – again no idea what this is – I used a miso soup sachet
1/2 tsp. sea salt
1/4 cup olive oil
1/2 cup pine nuts
dehydrated pumpkin seeds pulsed to course powder – I did not bother but rather sprinkled the seeds over the top
Process together all ingredients except the pumpkin seeds and the zucchini to make the pesto sauce.
Mix pesto with zucchini, serve and sprinkle with pumpkin seeds…
Original recipe also mentions tomato and olives… no idea where these fit in… add them to the top if you like – I didn’t!
Was great anyway – although a little garlicky!
