
Hunting around in the fridge – I had some sugar peas, a bag of baby Kale and some Tahini dressing.
So I out it together and made this little salad.
This would work best as a side dish or accompaniment to another main dish such as Rawsagna or Stuffed Mushrooms.
Ingredients:
1 bag of Baby Kale
1/4 cup sugar peas
2 Tbsp. lemon juice
1 Tbsp. flaxseed oil
3 Tbsp Tahini Dressing
Method:
Mix the Kale, lemon juice and flaxseed oil together in a large bowl ensuring the kale is well coated in the dressing.
Place onto serving dish and dress with sugar peas and Tahini Dressing
I love this tangy salad and could eat a whole bowl full – but some might find it a little too tangy – so best as an accompaniment.
You can also dehydrate the kale salad for 1/2 hour to warm it if the weather is cool and you need a little something warm.
