
Life is so busy… how does one get off and find a bit of peace and quiet?
I so often want off – especially after a day of encountering things that just make you stressed – whether health, work or relationship related…
Just for some peace and quiet alone time to be able to pick up the pieces and collate them into something that seems right so they can then be processed into something positive allowing forward movement…
Mindfulness…
Not going to go on a rant or anything but simply let you know that hey it is so good to focus your mind for a few minutes each day and experience what is… mindfulness in it’s simplest form… goes along way.
Any which way – try cooking in a mindful way and see how much pleasure it brings. As you chop the garlic, take a deep breath in and smell the garlic. As you pick the basil and chop it. Breathe deeply and inhale that amazing basil smell. As you pour olive oil – dip your finger in and taste the oil and savour it. Appreciate what is in your moment 🙂
My delicious much loved pesto pasta 🙂 I hope you devoured this as much as I did. Mindfully.
Ingredients (pesto sauce): (serves 2)
1/2 cup basil
3/4 cup pistachios
2 cloves garlic
1/2 red capsicum
1/8 cup sun-dried tomatoes
1/4 cup olive oil
1/2 tsp. sea salt
1/4 cup lemon juice
2 tbsp. water
Pasta
2 zucchini’s., julienned or spiralled
Method:
Combine all pesto sauce ingredients in a blender until well combined.
Mix with julienned zucchini and serve.
