Another fabulous dessert recipe that will be gone in a flash – and was gone in a flash!

This one is great because you don’t need to use an ice-cream maker – you can simply pour into a dish and freeze then slice into ice-cream wedges when frozen.

Ingredients:

2 cups macadamia nuts

1/4 cup coconut butter

1 cup raw honey or agave nectar (I only use 3/4 cup)

1 tsp. sea salt

2 cups coconut water

1 cup raspberries

Method:

Blend all ingredients in a blender.  Pour into a flat glass pie dish and place in freezer for 12 hours.  Alternatively, works well in the ice-cream maker for about 30 mins.

Enjoy a slice with fresh fruit or mint or top with a favourite sauce.
