
I’ve been wanting an ice-cream maker all summer and now in the last few weeks of summer – I bought one!
So it’s ice-cream making tonight and the kids are going to love this so MUCH.
Ingredients:
2 cups cashews
2 cups tightly packed coconut meat
4 cups coconut water
(I used 2 Young Thai Coconuts plus 1 cup of packaged coconut water)
1 cup raw cacao powder
1 cup agave nectar (I actually only used 3/4 cup as I find raw recipes very sweet)
Method:
Combine all the ingredients in a blender. Blend until completely smooth; there should be no lumps.
Pour into an ice-cream maker and freeze according to the manufacturer’s direction. Serve immediately or freeze.
Only half this 2L batch made it to the freezer – the kids ate 2 bowls each and you know what I don’t mind one bit – so much better for them than milk and processed sugar varieties you buy at the supermarket.
