Day 81 – Raw Parmesan Cheese

I love having raw dehydrated cheese on hand!

They are so perfect for sprinkling on a salad, a raw pasta or on any meal or entrée… or just sneak a bit between meals as a little munchies snack 🙂

My cheese stash ran out weeks ago – so time to make a new cheese.

Easy Peasy!

Ingredients:

2 cups raw macadamia nuts

2 Tomatoes, chopped

1/2 cup lemon juice

2 Tbsp nutritional yeast

1 tsp sea salt

1 cup water

Method:

Place all ingredients into a blender and blend on medium to high until smooth.

Pour mixture onto a lined dehydrator tray, spread across tray so mixture is about 1/4 inch thick. Dehydrate at 118 degrees Fahrenheit for 12 hours until cheese can be crumbled apart gently.  Store in an airtight container in the pantry indefinitely.

YUMMO – just resist not snacking on this!
