Day 44 – Ally’s Creamy Pasta Sauce

This week is going to be all about zucchini’s for me – I am collecting 2 – 3 zucchini’s from my garden every day!  It is crazy seeing them piling up faster than I can eat them!

So good that they are from my garden – grown organically and are full of goodness – but whoaaa… they say you are what you eat and I am starting to think that I am going to turn into a zucchini and unfortunately for me I am eating the Ronde De Nice and not the long skinny variety – will I turn into a round rotund looking zucchini?  😀

Today, inspired by what is in my fridge, the garden, my cupboard and the various raw pasta dressings on the internet, I have created my own creamy pasta sauce… yes you guessed it… sauce to put on my zucchini pasta for dinner.

OK – I don’t actually have anything that can turn my round zucchini’s into anything that resembles pasta – so I have just grated my zucchini instead 😛  Not quite so pretty but the taste is all good!

Ally’s Creamy Pasta Sauce

Ingredients:

1/2 cup raw cashews

3/4 cup raw macadamias

1/4 cup raw pine nuts

(OK that is my nut pantry cleaned right out! (except for a handful of raw almonds for my morning smoothie))

3/4 cup filtered water

1/3 cup lemon juice (why they need to be from USA when we have plenty in Australia – I do not know – note to self – grow own lemons)

drizzle of olive oil

Large handful of spinach leaves

1/2 tsp salt (Himalayan)

1 1/2 tsp minced garlic

couple of sprigs fresh parsley

couple of sprigs fresh basil

Method:

Place all the ingredients in the blender and blend until creamy, green and smooth!

Serve on top of zucchini pasta or kelp noodles…. yummo!

I am going to add some cayenne or chilli flakes to mine.
