This is such a quick an easy recipe to put together and reminds me of banana custard!
I’ve had some for breakfast this morning with some sprouted wheat and chopped apple – absolutely delicious.
The custard will go a little brown as the bananas oxidise – but is still yummy 🙂
Ingredients:…makes 4-6 serves…
2 medium bananas
3/4 cup cashews (soak for 2 hours if you have time – I didn’t and the recipe was fine)
1/4 cup coconut butter (or oil), melted
1/4 cup filtered water
2 Tbsp. agave nectar (or sweetener of your choice)
2 Tsp. lemon juice
1 Tsp. vanilla powder
1/4 Tsp. sea salt
Place all the ingredients into a blender and blend until smooth 🙂
Place in the fridge covered with plastic wrap for 1 -2 hours before serving… or eat right away 🙂
