This is just what I felt like for breakfast today!
Fresh, fruity and tasty!
I love the mint and ginger infused in the fruit and the glossy fruit pieces… hmmmm…
For the dressing…
1/4 cup agave nectar
2 Tbsp. crystallised ginger, finely minced
1 Tbsp. fresh mint leaves, finely minced
2 Tsp. lemon juice
Pinch of sea salt
For the fruit…
1 1/2 cups strawberries, hulled and quartered
1 cup green grapes
1 kiwi fruit, peeled and chopped
3/4 cup fresh blue berries
3/4 cup frozen mango pieces (or fresh if in season)
In a medium bowl combine the dressing ingredients together.
Add the fruit and toss until well coated. Allow to sit in the fridge for at least an hour to allow the fruit pieces to be infused with the dressing.
