
The school week is ahead and it’s time to whiz up some snacks for my kids for their lunchboxes and also for after school.
After making these this morning, the only regret I have is that I didn’t double the recipe…
If the kids are lucky there might be some left on Monday morning for school lunches…. !
Ingredients:
2 Tsp. cinnamon
1 Tsp. powdered vanilla (or vanilla bean paste or extract)
7-8 pitted fresh dates
1/2 cup walnuts (you can swap these nuts for other nuts if you like, pecans or almonds would work – I always use soaked and dehydrated nuts – easier to digest and also taste better)
1/2 cup goji berries
2 Tbsp. organic coconut butter, melted
pinch of sea salt
Method:
In a small food processor, combine the dates, vanilla and cinnamon until the dates begin to form a sticky dough.
Add the remaining ingredients and pulse to combine ingredients. Process for a further 10-30 secs until the mixture is well processed and combined.
Line a small plastic container (10cm x 10cm) with baking paper.
Press the mixture into the container and freeze for 30 mins.
Turn the mixture out onto a chopping board and cut into bars.
Keep in the fridge for 2-3 weeks (but there is no way it will actually keep that long before being eaten).
