You won’t believe you are not actually eating a delicious gourmet oat based cooked porridge when you eat this – except that it is not hot!
I remember I used to make porridge with apples and dates in it each morning for the kids and I for breakfast – this reminds me of that – but without that ‘heavy’ feeling oat porridge gives you.
Ingredients:.. serves 1…
1 unpeeled apple, cored and quartered
2 dates pitted
1/4 cup soaked and dehydrated walnuts
1/4 cup shredded coconut
nut cream (optional)
coconut sugar (optional)
In a food processor, process together the apple, dates and walnuts until roughly chopped into oat size pieces (don’t over process).
Stir through the coconut.
I like to serve this with nut cream and a sprinkle of coconut sugar.
I’ve had this 2 days in a row – so satisfying!
