Today I found out that I have been accepted into Uni to study Nutrition – I am very excited at the wealth of knowledge that I will have access to and then share with the world…

An exciting adventure begins where I can study and bring the science to what I already know about how good raw food is for you 🙂

And just because I love Kale so much and have a bunch in my fridge – a new Kale salad for you to try.

Ingredients: (serves 2)

1 head kale

juice of 1/2 a lemon

1-2 Tbsp. extra virgin olive oil

1/2 avocado

1 tsp. sea salt

1/4 tsp. black pepper

pinch of cayenne pepper

2 Tbsp. black olives

A little bit of chopped red onion

dulse flakes

Method:

De-stem, wash and chop the kale and put it in a large bowl

Drizzle on the lemon juice and olive oil, then add in the avocado, salt and pepper.

Use your hands to massage the leaves and really brake them down. Work in the avocado until it all becomes creamy.

Add in the olives, dulse and onion and serve 🙂

Delicious…
