Day 91 – Buddha Bowl

If every meal I ever ate tasted as good as this – I would be in Heaven!

You can’t eat the same dish every night – but this one is tempting…

As I prepare my raw food dishes each day – I often think about taking on Master Chef contestants… I would just love to have a play off against one of them – they cook the ‘cooked’ dish and I cook the raw dish!  Then we go to the judges to see which tastes the best!

I can honestly say, raw food has the MOST intense flavours imaginable and this dish I am sure could compete with any cooked Laksa dish!

Be warned… the ingredients list is huge and your kitchen will probably end up looking a bit like a bomb hit it – but it is worth it, so get the lot and enjoy the flavour sensation you produce.

Ingredients:

2 pitted dates

2 Tbsp. chopped fresh ginger

3 scallions (I used a few spring onions and a quarter of brown onion)

1 large jalapeno chilli (a must)

2 garlic cloves

3 cups coconut water

1 mango, peeled, pitted, and sliced in thin strips

1 avocado, peeled, pitted, and sliced into thin strips

1 radish, cut into matchstick pieces

2 large carrots, peeled into long strips using a vegetable peeler

2 cups sprouted mung beans

4 small bok choy leaves, sliced into long strips

1 cup snow peas

1/4 cup torn fresh herbs ( I used basil and a touch of mint)

Method:

Put dates, ginger, onions, jalapeno and garlic into a food processor. Blend until finely chopped.

Add the coconut water and blend until combined (I transferred my mixture to the blender for this step because my processor is very small).

Toss mango, avocado, radish, carrots, sprouts, bok choy and snow peas together in a large bowl.  Add the broth and herbs and toss everything together.

Serve with plenty of broth!
