Day 65 – Apple-Pistachio Granola

Apple-Pistachio Granola
Apple-Pistachio Granola

It is all about Jenny Ross and her ‘Raw Food Basics’ book this week!

I just love this new recipe – it is better than any ‘deluxe’ cereal I have ever tasted!

I can’t wait to just eat it all up!  Crunchy, sweet, healthy, I am thinking of taking it as a snack to work!  Take it with me camping…. feeding it to my children every morning for breakfast – it is so good and so much better for you than the cereals I have been buying for my kids over the past years!

Ingredients:

4 cups sprouted buckwheat (I left mine to sprout over 2 1/2 days)

1/2 cup raw agave nectar

1 cup diced apple

1/2 cup pistachios (soaked for 2 hours)

1 Tbsp. cinnamon

1 tsp. nutmeg

a dash of Himalayan salt

Method:

Combine all ingredients in a large bowl and toss well, making sure the agave and spices coat the ingredients (I actually underestimated the sprouting process, so my granola ended up a little lean on the buckwheat side).

Spread ingredients onto lined dehydrator tray and dehydrate for 12 hours at 118 degrees Fahrenheit.  Half way through (or there abouts) toss the mixture to ensure the groats dry evenly as wet spots can lead to fermentation.  Once mixture is dry all the way through, store in an air-tight container indefinitely… why didn’t I make more?

So delicious – a favourite for sure!

Perhaps I could just pour a bowl full and pour almond milk all over it and munch away!

YUM!
