
Still excited by Kale – I was extremely pleased to find that my fridge had been restocked with a bunch of Kale – so I set about to find a Kale Salad recipe. I found one online and adjusted it to add a bit of Ally to it. I think it turned out pretty well – evidenced by the fact that the whole lot was eaten for dinner… not a single Kale leaf left…
Ingredients:
Juice of 1 lemon
2 cups Kale (I used baby Kale leaves)
1 sachet of miso
black pepper
1/2 avocado, diced
1/2 tomato, diced
2 Tsp. olive oil
1 Tbsp. Hemp seeds (optional)
Method:
Combine all ingredients in a bowl ensuring all the leaves are well coated. Serve.
Deliciously refreshing and tasty.
