
Today a quick salad and that will be good enough as a meal…
Work Christmas lunches and festivities are taking there toll on my intentions to eat 80-90% raw food…. Having Teppanyaki is not exactly raw food! But hey it is important to be a part of the team – so I just enjoyed the fun of it all and tried to stick mostly to the vegetarian dishes and a bit of fish.
I had not tried this salad before and I am not really wrapped with it… perhaps I was a bit sloppy with my measuring.
For this salad you will need to use the sweet onions that I made on Day 26.
Ingredients:
2 cups of chopped Cos lettuce
1/4 cup Sweet and Red Onions
4 chopped kalamata olives
1 cup chopped tomato
1/2 cup diced cucumber
Combine all ingredients in a bowl.
Dressing:
In a blender, blend: 1/4 cup macadamia nuts; 2 Tbsp water; 1 tsp raw honey; 1/2 clove garlic; 1/2 tsp onion powder; 1 Tbsp herb seasoning and 1/2 tsp salt.
Once combines slowly add 1/2 cup cold-pressed extra virgin olive oil and 1/2 squeezed lemon juice.
Pour dressing over salad mix and combine well.
Serve!
