
I forgot I was heading out for dinner tonight – so no rawsagna tonight – instead I decided to whip up a quick salad for lunch.
Young Thai coconuts appear in my fridge quite often… amazingly they are extremely hydrating and so refreshing (perfect for when you might have had 1 or 2 too many wines). I had never figured out what to do with the coconut once I had drunk the water – it seems a waste throwing out that white creamy flesh – but I didn’t have a recipe – until now – so they have often gone in the bin…
Ingredients:
2 Roma tomatoes, diced
Flesh of 1 Young Thai Coconut, chopped
1/2 Mango, diced
1/4 cup lemon juice
1/4 cup coriander chopped
1 spring onion chopped
few shakes of salt
few shakes of chilli flakes
Method:
Place all the ingredients in a bowl and let marinade over night. Then serve and enjoy!
I was a bit hesitant about this recipe – but it is actually extremely fresh, zingy and that chilli really kicks it off!
Absolute winner…
Now home and off to dinner.
