
My mum’s favourite chocolate was always Old Jamaica… inspired by an old favourite, I’ve come up with a raw version…
It seems to go down ok at my place… I wonder how it will at yours?
Ingredients:
160g cacao butter, melted
1 1/2 Tbsp. coconut oil, melted
110g cacao powder
45g maple syrup
20g (1 Tbsp.) dark rum (not raw – I know)
1 cup raisins
Method:
Combine all ingredients together. (I actually prefer to do this in my Thermomix with the temp set at 37 and on speed 1 stirring).. Alternatively you can combine together in a bowl over steaming water.
Once all combined and melted together, spoon into silicon molds and set in the freezer for 10 -15 mins.
Once set, turn chocolate out from molds and either eat or keep in the fridge for later.
Makes about 15 chocolates and they are extremely rich and delicious – if not a little too decadent 🙂 I’m going to save some for mum when she visits next week 🙂
