Is it just me or do berries always just seem like something special?

I know growing up, berries were a treat, being more expensive than oranges, apples and bananas, it was special to have berries.

So making this delicious berry smoothie just gives me a very ‘merry’ feeling to start my day, I feel like I am having a treat.  It just so happens that while looking after my mental health, I am also looking after my body, berries are nutritional powerhouses, full of anti-oxidants, phytochemicals (help with prevention of chronic disease), vitamins, fibre, anti-inflammatory, etc… etc…

Ingredients:

2 cups frozen mixed organic berries

1/2 cup cashews

1 – 1 1/2 cup water

1 Tbsp. agave nectar (or 2 dates)

Method:

Place all ingredients in the blender – you may want to start off with only the 1 cup water.  Blend until the frozen berries are blended – you may need to add some more water.  I like a good thick smoothie that I can almost eat with a spoon – if you like it less thick – just add more water.

You can also make this smoothie with fresh berries – just use ice instead of water to get the smoothie thickness.
