Day 210 – Pecan and Berry Chia Porridge

I have never really been a great fan of chia porridge but I have to say that this chia porridge is actually REALLY good.  I left mine in the fridge overnight and the consistency ends up being a little like a custard and the flavour, well that is not dissimilar to vanilla custard with cinnamon.

Ingredients:

1 1/4 cups Almond Milk

2 Tbsp. chia seeds (black or white or mixed is fine)

4 pitted dates

1/4 Tsp. cinnamon

pinch of salt

For the topping:

2 Tbsp. dry pecans, chopped

1/2 cup berries or other fruit (bananas would work well)

Method:

Begin preparing this the night before.  Combine the almond milk, chia seeds, dates, cinnamon and salt in a blender until well combined and smooth.

Place in a bowl and refrigerate overnight.

The next morning serve with nuts and fruit of your choice.

I enjoyed this very much for breakfast this morning.  It is filling so be warned a little goes a long way.
