This is a great salad to have on hand in the fridge to add to your lunch or dinner plate.Simple to make, easy ingredients… you can add goat’s cheese or feta on top (not raw of course) or some pistachios, pine nuts or sunflower seeds.
400g or 2 beetroots, peeled and quartered
100g or 1 carrot, roughly chopped
1/4 red onion
1 green (or red) apple, quartered and cored
a few sprigs of coriander
2 Tbsp. olive oil
juice of 1 lemon
sea salt to taste
Place all ingredients into a food processor and process until roughly chopped and combined.
Top with crumbled cheeses, nuts or seeds or enjoy as is.
