This is creamy sauce that I am going to use on Gnocchi Carbonara, but you could drizzle it over salads, pizzas or anything really. It has a lovely creamy and garlic flavour.
Makes about 3 cups
1 cups cashews
1 cup pine nuts
2 cups coconut milk
1 1/2 garlic cloves
1 Tsp. sea salt
1 Tsp freshly ground black pepper
Put all ingredients into a blend and blend thoroughly.
Cover and refrigerate for up to 3 days.
