
These are a delicious sweet fruity snack to have in the fridge ready for eating anytime.
I found the recipe was a bit too wet so added additional Almond meal to the recipe and a little coconut oil to further harden the fudge balls.
This is my adjusted recipe.
Ingredients:
2 cups dates, pitted and soaked for 4 hours
1 cup apricots, soaked for 4 hours
1/2 cup almond butter
2 cups almond meal
1/2 cup carob powder
2 Tbsp. coconut oil, melted
3/4 strawberries
Method:
Put the dates and apricots in a food processor and blend to a smooth paste.
Add the almond butter, carob powder, oil, meal and strawberries and process until smooth.
Remove from the processor and form into 1 inch balls. They will keep for several weeks in the refrigerator.
I know my kids with go through these after school 🙂 They are very nice.
