Day 95 – Raw Carrot Cashew Bread

Raw Carrot, Cashew & Raisin Bread

I didn’t find a plain cashew bread recipe – but this ones sounds even better…

Thought I’d give it a whirl.

Ingredients:

2 3/4 cups chopped carrot (grated or finely chopped in food processor)

1/2 cup raisins

3/4 cup cashews, soaked

1/2 tsp. nutmeg

3/4 cup ground linseed

1 tsp. cinnamon

1/2 Tbsp. agave nectar

water to blend

Method:

Mix all ingredient together in a large bowl until well combined

Spread on a lined dehydrator tray about 5mm thick

Dehydrate at 115 degrees Fahrenheit for 6 hours.Ā  Flip and dehydrate a further 2-4 hours until the bread is dry but still pliable.

Waiting… for the dehydrator to finish – then will let you know what it is like…

Out it comes and into my lunch box to take to work – YUM – it is sweet and pliable but thick and crunchy enough to be sort of like a muesli bar bread combination – I love it!

This one is going into the kids lunch boxes too – they will definitely eat this one šŸ™‚
